SUNY Adirondack, Victory View offer Valentine's special event

Seasoned hosts four-course paired menu in first Collaborative Cuisine of year

QUEENSBURY, New York (Feb. 3, 2026) — Why ask your valentine to settle for just chocolate and flowers when SUNY Adirondack and Victory View Vineyard offer a delicious four-course paired meal to impress?

On Friday, Feb. 13, chefs Matt Bolton and Dynia Mariano and SUNY Adirondack Culinary students present the first Collaborative Cuisine event of the Spring 2026 semester.

Celebrate Valentine’s Day with a date night, double date or friends night out, with seating starting at 5:30 p.m. for 6 p.m. service.

“We’re excited to be part of someone’s celebration,” Bolton said. “Creating a memorable experience with good company over great food is always our goal, so it’s wonderful for our students to have the opportunity to have a hand in that.”

Dinner for parties of two or more with a sweet surprise at meal’s end are $90 per person; standard service is $80 per person. Tables of two are sold out, but seats are available for larger parties, or for duos interested in sitting at communal tables.

The first course is an arugula salad with charred strawberries, pickled red onion, aged gouda tuile and sherry vinaigrette, paired with Victory View Vineyard 2022 The Colonel White Blend. The second is seared Atlantic salmon with beet risotto and carrots in basil beurre blanc, paired with Victory View Vineyard 2023 Annalise Rose. Grilled rib eye, potato Gruyère Dauphinoise and roasted winter squash is paired with Victory View Vineyard 2022 Diana Petite Pearl for the third course. Wrapping up the meal is a pâte à choux, praline crème Mousseline with chocolate cremeux or cherry flambé with chocolate ganache and toasted almond, paired with Victory View Vineyard 2022 Freedom Frontenac.
